ABOUT

In the highlands of Tulise village, Yirgacheffe, about 700 smallholder farmers bring their harvest to the Adorsi washing station. These coffees, grown between 1,900 and 2,200 meters, come from native Ethiopian heirloom varieties thriving in shaded, organic gardens. Yirgacheffe’s diverse microclimates, warm tropical days, and balanced rainy and dry seasons foster exceptional complexity and clarity in the cup.

PROCESS

Hand-picked cherries were sorted to remove unripe or damaged fruit, then sealed in oxygen-free polyurethane tanks for 7 days of anaerobic fermentation at 15–18°C, until pH reached 3.8. Valves released CO₂ while keeping oxygen out, ensuring clean, controlled fermentation.

Afterwards, cherries were washed in fresh Wegida River water, graded by weight, and quick-dried mechanically to 35% moisture. They were then sun-dried on raised African beds under shade for 24–30 days until 12% moisture, rested in the warehouse for 4 weeks, and finally milled.
