ABOUT

Finca La Cumbre is located in Teruel, Huila, Colombia, and managed by Hector Hernandez, a 44-year-old, first-generation coffee grower. The farm consists of 7.5 hectares and sits at an elevation of 1,850 m.a.s.l. Around 23,000 coffee trees are in production of the Colombia, Castillo, and Geisha varieties.

Hector starts his lot by carefully handpicking the ripest of cherries and removing all floaters, leaving the cherries in the hopper overnight to de-pulp the following day. The wet parchment is then placed in GrainPro bags to ferment for 48 hours, washed with low water and drained. For the drying stage, Hector has developed his method: He first lays the coffee to dry in a mechanical silo at a temperature of 20° - 30° C, for 24 hours, after which he stabilizes the parchment in sealed GrainPro bags for one whole week. The parchment is then laid in the silo for a final drying of 8 hours, reaching 10% humidity.
