Handpicked Excellence, Anaerobic Perfection

From the fertile highlands of Benti Nenka in Guji Zone, this exceptional coffee is the work of dedicated smallholder farmers, each cultivating just 1–2 hectares of land. Coffee is not only their livelihood but an integral part of their way of life.

Collected by EDN Ethiopian Coffee Export PLC, a trusted partner of Belco for over five years, this lot represents the craftsmanship of around 400 family farms. After harvest, the cherries are delivered to the Benti Nenka station for meticulous processing.

The journey begins with careful hand selection of the ripest cherries. They are then placed in sealed, oxygen-free tanks, where anaerobic fermentation occurs under constant monitoring. For 7–10 days, at a steady 15–18 °C, sugar levels are tracked to ensure the perfect balance of complexity and clarity in the cup.

Once fermentation is complete, the cherries are gently moved to raised drying beds. Resting in the shade for 15–20 days, they are stirred regularly to encourage airflow and prevent over-fermentation. When the beans reach the optimal 11% humidity, they are ready to embark on their journey abroad.

The result: a coffee that reflects both the terroir of Guji and the careful precision of its producers—a true showcase of anaerobic perfection.
