This Hambella Natural is a beautiful expression of this celebrated coffee-growing area in Guji, Ethiopia — exceptionally clean, sweet and vibrant. A lot of you asked us for an Ethiopian roast closer to medium, so we roasted this one medium.

As filter, expect lots of blackberry, delicate tea and grapefruit.

As espresso, it’s incredibly sweet and berry-driven, with marzipan, milk chocolate and crisp lime acidity. With milk, it’s pure heaven — creamy, sweet and full of marzipan.

HAMBELLA WAMENNA

Perched between 2,100 and 2,200 meters above sea level, Hambela lies in the Guji zone of southern Ethiopia. The region’s rich biodiversity, fertile soils, and cool climate create ideal conditions for exceptional coffee. Here, indigenous trees, ancestral traditions, and high-altitude terroir come together to reveal the full potential of Ethiopian Arabica.

In the villages of Alaka, Korchema, and Goyo, coffee is grown under organic and semi-forest systems, with native shade trees such as Aningeria adolfi-friederici (qararo) protecting the coffee plants while preserving the forests and soils.

Aman Adinew founded Metad in 2010, with coffee production beginning three years later. His brother, Tariku Adinew, joined shortly after. Today, Metad owns a 200-hectare farm in Hambela Wamena, within the Alaka and Bishan Fugu kebeles.

The farm follows the Ethiopian semi-forest model and is managed using organic practices. Its plots are planted with varieties 75227, 74112, 74110, and 74140, and all coffee cherries are hand-picked.
