Grown at high altitude and processed using the anoxic washed method — where cherries ferment without oxygen before being washed and dried — it delivers exceptional clarity and sweetness. The cup reveals floral aromas, red berry notes, and a bright, balanced acidity that captures the essence of Tolima’s highlands.
Jorge Elías Rojas is a fourth-generation coffee grower from Planadas, Tolima, Colombia, and the founder of Finca El Jardín. His 3-hectare farm cultivates diverse varieties such as Caturra, Yellow Colombia, Pink Bourbon, Wush Wush, and Geisha.
He began working in coffee at age 13 and later expanded his family’s land to establish his own farm. Since 2016, Jorge has focused on specialty coffee, developing his own fermentation and drying methods, starting with careful cherry selection to ensure high quality.
